Chicken Marsala
- 2 tablespoons olive oil
- 4 (4 ounce) boneless skinless chicken breasts
- 3 garlic cloves, minced
- 12 cup sliced fresh mushroom
- 3 tablespoons marsala wine
- 1 cup chopped tomato with juice
- 12 teaspoon kosher salt
- 12 teaspoon mixed Italian herbs
- 14 teaspoon black pepper
- Place olive oil in skillet set to medium-high heat.
- Cook chicken breasts 2-3 minutes on each side or until each side is golden brown.
- While chicken breasts continue to cook, add garlic and mushrooms.
- Cook another minute.
- Add marsala.
- When marsala begins to boil, add tomatoes.
- Stir all ingredients together and lower heat.
- Add spices.
- Cover skillet, reduce heat to medium-low and cook another 15-20 minutes or until chicken registers 165F on instant read thermometer.
- Serve over brown rice or couscous.
