Free-form Spinach and Three Cheese Pies

  1. Heat oil in a frying pan and cook onion and garlic until softened.
  2. Remove.
  3. Combine onion mixture with the spinach, ricotta, cheddar, herbs, lemon rind and seasoning in a large bowl.
  4. Cut a 16cm circle of pastry from each sheet and place onto a lined tray.
  5. Spoon the filling evenly between the 4 pastry circles, leaving a 3cm border.
  6. Sprinkle the Parmesan over the filling.
  7. Fold the pastry border up over the edges of the filling, overlapping and pressing the pastry edges together to form an outer crust.
  8. Bake pies at 200 degrees C for 20-25 minutes or until pastry is golden brown.
