Free-form Spinach and Three Cheese Pies
- 2 tablespoons olive oil
- 1 onion, roughly chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, crushed
- 300g baby spinach leaves, blanched, excess liquid squeezed out
- 300g ricotta cheese
- 1 1/2 cups grated KRAFT* Cheddar Cheese
- 1/4 cup flat-leaf parsley, chopped
- 1/4 cup basil, chopped
- 1/4 cup mint, chopped
- 2 teaspoons grated lemon rind Safeway 4 ct For $5.00 thru 02/09
- salt and pepper to taste
- 4 sheets frozen puff pastry, thawed
- 50g shaved Parmesan
- Heat oil in a frying pan and cook onion and garlic until softened.
- Remove.
- Combine onion mixture with the spinach, ricotta, cheddar, herbs, lemon rind and seasoning in a large bowl.
- Cut a 16cm circle of pastry from each sheet and place onto a lined tray.
- Spoon the filling evenly between the 4 pastry circles, leaving a 3cm border.
- Sprinkle the Parmesan over the filling.
- Fold the pastry border up over the edges of the filling, overlapping and pressing the pastry edges together to form an outer crust.
- Bake pies at 200 degrees C for 20-25 minutes or until pastry is golden brown.
