Vickys Lemon & Courgette Linguine, Gluten, Dairy, Egg & Soy-Free
- 400 grams gluten/egg-free dry linguine
- 3 courgettes, grated or thinly sliced, skin on
- 3 tbsp olive oil
- 1 clove garlic, finely chopped
- 1 zest of a lemon
- 1 pinch crushed chillies
- 1 small bunch of basil leaves
- 1 salt & pepper to taste
- Cook the linguine according to the pack directions then drain
- Add the courgettes, oil, garlic, zest, chillies and most of the basil
- Season to taste and toss together.
- Serve with a drizzle of extra oil and the remaining leaves scattered on top
