Berry Whiligig
- 1/2 cup sugar
- 2 tbsp. cornstarch
- 1/2 tsp. salt
- 1/4 tsp. ground cinnamon
- 1 cup water
- 3 fresh
- frozen blackberries
- a mixture of berries
- 1 cup all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 2 tbsp. shortening
- 1 egg, lightly beaten
- 2 tbsp. milk
- 1/4 cup butter, softened
- 1/2 cup sugar
- 1 tsp. grated lemon peel
- 1/4 tsp. ground cinnamon
- Berries: In a saucepan, combine sugar, cornstarch, salt and cinnamon from the berry ingredients.
- Add water.
- Cook until mixture boils and thickens.
- Stir in berries and cook over low heat for 5 minutes.
- Pour into a greased 8 square baking pan.
- Set aside.
- Combine flour, baking powder and salt in a bowl.
- Cut in shortening untilcoarse crumbs form.
- In another bowl, mix egg and milk.
- Add to flour mixture; mix to make a smooth dough.
- Knead for several minutes.
- Roll into a 12x8-inch rectangle.
- Spread with butter.
- Combine sugar, lemon peel and cinnamon; sprinkle over dough.
- Starting at a long end, roll up; seal edges.
- Cut into 9 slices.
- Place slices (still rolled up) over berry mixture.
- Bake at 400F for 22-25 minutes or until golden brown.
