Diabetic Eggnog
- 2 eggs, beaten
- 14 cup Splenda sugar substitute
- 1 (13 ounce) can evaporated milk
- 2 cups 2% low-fat milk
- 1 teaspoon vanilla
- 1 teaspoon rum flavoring
- ground nutmeg
- 2 cups 2% low-fat milk
- Mix 2 cups 2% milk with Splenda in pan.
- Boil for 1 minute,stirring constantly.
- Remove from heat.
- Mix 1/2 of the milk with the eggs,and add back to the pan.
- Cook over low heat,stirring constantly,until slightly thickened.
- Remove from heat.
- Stir in Vanilla and Rum flavorings.
- Cool to room Temperature,then refrigerate til chilled.
- Stir 2 cups 2% milk into chilled mixture.
- Sprinkle with nutmeg.
- Serve in 4 oz.
