Miniature Stuffed Potatoes

  1. Heat oven to 350F.
  2. Cook potatoes in boiling water 15 min.
  3. or just until tender; drain.
  4. Cut thin slice off of top of each potato; scoop out centers into bowl using melon baller or teaspoon, leaving 1/4-inch-thick shells.
  5. Add sour cream, bacon, onions and potato tops to potatoes in bowl; mash until blended.
  6. Spoon into potato shells; top with cheese.
  7. Place in shallow baking dish.
  8. Bake 10 min.
  9. or until heated through.
