Breakfast Sandwiches
- 9 eggs
- 2 14 cups egg whites
- 12 large white onion, diced
- 20 slices bacon, precooked
- 34 lb colby cheese
- 1 12 cups mayonnaise
- 1.
- Combine the eggs and egg whites.
- Fry in a pan to make scrambled eggs.
- 2.
- Place egg mixture in a large bowl and refrigerate until the mixture is chilled.
- 3.
- Dice precooked bacon and onion.
- Combine with the eggs.
- Grate colby cheese and add to the eggs.
- Stir in mayonnaise.
- Place in refrigerator.
- 4.
- When ready to serve, toast slices of bread.
- Spread egg mixture on toast, place under the broiler until eggs are bubbly and brown.
