Hearty Brunswick Stew

  1. In a heavy skillet cook bacon until cooked, remove the bits and set aside, however, save fat in the skillet to continue with the recipe.
  2. Combine flour, salt, pepper and cayenne and dredge the chicken (or hare).
  3. Brown the pieces in the rendered bacon fat with the onions.
  4. When finished, place in crockpot.
  5. Add 1-1/2 cups (350 ml) boiling water (or a mix of chicken stock and white wine if using), tomatoes, red pepper and thyme to crock pot with meat.
  6. Cover and cook on low 6 to 8 hours.
  7. Add remaining ingredients including reserved bacon, cover and cook on high 25 minutes or until vegetables are tender.
