Southern Pecan Pie
- 2 tablespoons butter
- 1 cup sugar
- 4 eggs
- 34 cup light Karo syrup
- 12 cup Dark Karo syrup
- 1 dash nutmeg
- 1 tablespoon vanilla (pure mexican vanilla is best)
- 1 14 cups pecans (halves or chips)
- Cream butter and sugar together.
- Add eggs, beating one in at a time with electric mixer on medium speed.
- Add, vanilla, nutmeg and karo and beat well.
- Pour into unbaked 10" inch pie shell.
- Put pecans on top and place aluminum foil around the edge of the crust to avoid burning.
- Bake 15 minutes at 400 degrees.
- Reduce heat to 350 and bake 45 more minutes.
- Remove allow to cool about 15 minutes and serve warm.
