Amaretto Cafe Cream Brownies
- 1 (19 1/2 ounce) package brownie mix
- 12 cup unsalted butter, softened
- 13 cup milk
- 2 large eggs
- 12 ounces cream cheese, softened
- 1 (7 ounce) jar marshmallow creme
- 1 12 tablespoons instant espresso or 1 12 tablespoons instant coffee powder
- 1 teaspoon almond extract
- 1 cup chopped walnuts
- Preheat oven to 350; place oven rack in lower third of oven; spray the bottom only of a 13 x 9 inch pan with nonstick cooking spray.
- In a big bowl, mix the brownie mix and softened butter with an electric mixer set on low for 1 minute or until crumbly.
- Reserve 1 cup of the mixture in another bowl for topping.
- Add milk and eggs to the remaining brownie mixture; mix with a wooden spoon until blended and smooth; spread batter evenly into prepared pan.
- In another bowl, beat cream cheese, marshmallow creme, espresso powder, and almond extract with electric mixer set on medium until smooth; spread evenly over brownie mixture.
- Add walnuts to reserved 1 cup brownie mixture; mix well.
- Sprinkle evenly over cream cheese mixture.
- Bake 28-30 minutes or until pick comes out almost clean (do not overbake).
- Transfer to wire rack and cool completely.
- Cut into squares; store in refrigerator.
