Red Onion Relish
- 2 tablespoons canola oil
- 2 red onions, finely diced
- 1 tablespoon minced garlic
- 1 serrano chili, finely diced with seeds
- 14 cup freshly squeezed lime juice
- salt and pepper
- 3 tablespoons finely chopped cilantro leaves
- Heat oil in a large saute pan over high heat.
- Add the onions, garlic, and chile to the pan and cook until soft.
- Add the lime juice and season with salt and pepper.
- Remove from the heat and stir in the cilantro.
