Vickys Simple Prawn & Pesto Pasta, Gluten, Dairy, Egg & Soy-Free
- 400 grams dried spaghetti or other pasta of choice (check label for gf, ef)
- 200 grams Vickys Pesto recipe from my profile
- 250 grams cooked & peeled prawns
- 70 grams rinsed rocket/arugula leaves
- 1 squeeze of lemon
- Cook the pasta in boiling salted water as per the pack instructions, then drain
- Add the pesto and stir to coat the pasta well
- Add the prawns, rocket and lemon juice and heat through for a minute to wilt the rocket and warm the prawns
- Serve immediately
