Spicy Lotus Root and Burdock Root Salad with Sesame Seeds

  1. Shave or shred the burdock root and thinly slice the lotus root.
  2. Boil some water in a pot and add a teaspoon of vinegar (not listed).
  3. Boil the burdock root first and add the lotus root a minute after.
  4. Boil for 30 to 60 seconds and transfer to a sieve to cool.
  5. Do not soak in water.
  6. When the vegetables have cooled, toss in a bowl with the seasonings and it's done.
