Atkins Red & Green Holiday Salad
- 14 cup mayonnaise
- 3 tablespoons sour cream
- 1 scallion, chopped
- 14 cup basil leaves, fresh
- 2 tablespoons tarragon leaves, fresh
- 2 teaspoons white wine vinegar
- 1 medium radicchio, leaves torn
- 2 cups watercress
- 12 medium cucumber, peeled, seeded and thinly sliced
- 1 cup grape tomatoes, halved
- 12 small red onion, thinly sliced
- Combine mayonnaise, sour cream, scallion, basil, tarragon and vinegar in a blender and process until smooth.
- Combine remaining ingredients in a bowl.
- Add the dressing and toss well to coat.
- Divide among 8 salad plates.
