Arkansas Black-Eyed Pea Salad
- 3 (8 ounce) cans black-eyed peas
- 1 (8 ounce) can green beans
- green pepper
- red onion
- 12 cup oil
- 1 cup vinegar
- 1 cup sugar
- 4 ounces pimientos
- salt and pepper
- Drain the peas, beans, and pimento.
- Chop onion and pepper, I add them to the pea mixture to look the prettiest, it's all to taste.
- Add oil, vinegar, sugar, salt, and pepper-stir gently.
- I let it sit at least a couple of hours to overnight.Can be made ahead of time.
- It travels well and is a crowd pleaser.
