Crunchy Cocoa Okara Sticks

  1. Chop the dried fruit and walnut into easy to eat pieces (about 5 mm).
  2. Combine and sift the * powdered ingredients.
  3. Mix together Step 1 and cover completely with the flour.
  4. Add the okara and stir well to get rid of lumps.
  5. Add the jam to the soy milk and mix well to dissolve.
  6. Add the liquid from Step 4 to the powdered ingredients from Step 3 and blend thoroughly.
  7. Bring together to form one lump.
  8. Preheat the oven to 180C for 20 minutes.
  9. Place the dough on a sheet of parchment paper.
  10. Wet your hands and spread out the dough to form a 5 mm thick square.
  11. Bake on the top rack of the 180C oven.
  12. Remove from the oven and let cool.
  13. Cut into 5 mm wide sticks.
  14. Lower the oven temperature to 160C and bake again for 10 minutes.
  15. Let cool while still on the baking tray.
  16. They will become very crunchy once completely cooled.
  17. If they harden too much, lightly microwave to soften.
  18. I recommend dipping these into a drink like coffee, similar to how biscotti is eaten.
