Broiled Chicken with Spinach

  1. Brush each piece of chicken with 1 tsp.
  2. of the vinaigrette.
  3. Broil 4 min.
  4. on each side, or until cooked through.
  5. Cook rice according to package instructions.
  6. When done, divide into 4 equal servings and scoop onto the centers of 4 plates.
  7. Toss spinach with remaining vinaigrette and place on top of rice on plates.
  8. Top with cooked chicken.
  9. Toss together broccoli, carrots, mushrooms, onions and ranch dressing.
  10. Cover and refrigerate briefly.
  11. Sprinkle salad with sunflower kernels just before serving.
  12. Serve each person a 6 oz cup of yogurt for dessert.
  13. Serve each person an 8 fl oz glass of CRYSTAL LIGHT with meal.
