Salmon Wasabi Burgers

  1. Rinse salmon, pat it dry, and cut into 1/4 inch cubes.
  2. In a large bowl, combine salmon, ginger, scallions, cilantro, eggs, lime juice, almond flour and salt.
  3. In a small bowl, combine wasabi powder and water to form a paste.
  4. Mix wasabi paste into salmon mixture.
  5. Form batter into 2-inch patties with your hands.
  6. Set patties aside for a moment.
  7. Heat oil in a large skillet over medium high heat.
  8. When oil is hot, saute patties in batches until golden brown, 6 to 8 minutes per side.
  9. Serve!
