Sausage And Pepper Hero
- 6 fennel sausage links (2 lb.)
- 1 Tbsp. olive oil
- 1 medium onion, chopped
- 2 green bell peppers, cut into 1 1/2 inch sq.
- 1 (14 oz.) can Italian peeled tomatoes, drained and chopped
- 1/2 c. water
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. fresh parsley, chopped
- 6 long Italian rolls
- Cut fennel sausages into 3 pieces each.
- In a large non-reactive large frying pan, heat oil over medium heat.
- Add sausages and cook, turning every 10 minutes or until browned and cooked through.
- Spoon off fat from pan.
- Add onion and peppers. Cook, stirring every 5 minutes.
- Add tomatoes, water, salt and pepper.
- Bring to boil.
- Reduce heat to low.
- Cover and cook for 5 minutes.
- Stir in parsley.
- Spoon sausages with peppers and sauce onto split rolls.
- Serves 6.
