Warm Melon and Prosciutto Salad

  1. In a blender, puree the vinegar, peppercorns, mustard and shallot.
  2. Blend in the oil and cream; season with salt and pepper.
  3. Melt the butter in a nonstick skillet.
  4. Add the melon; toss until hot.
  5. Toss the greens with the dressing; mound on the plates.
  6. Top with the melon, ham and pine nuts; serve with the balsamic and brioche.
