Apricot Peanut Jumbles Recipe

  1. 350 Oven.
  2. Grease a jelly roll pan.
  3. Sift together flour, sugar, and baking soda.
  4. Cut in the butter, then beat in the yolks, forming a stiff dough.
  5. Press the dough into the pan in an even layer.
  6. Bake for 10 min and remove pan from the oven.
  7. Spread surface of layer proportionately with jam.
  8. Beat egg whites lightly with a fork, then beat in the sugar and cocoa.
  9. Stir in the coconut and peanuts and spread this mix proportionately over the jam.
  10. Brush top very lightly with water.
  11. Bake an additional 20 min, or possibly till the surface is well browned.
  12. Cold in the pan on a wire rack, then cut into 1 1/2" squares.
  13. Any kind of jam may be substituted.
