Easy, Delicious & Spicy Mince and Vegetable Curry in a Frying Pan

  1. Chop the onion, carrot, garlic and ginger finely.
  2. Cut the zucchini (or eggplant) into 1 cm quarter rounds.
  3. Combine the .
  4. Heat oil in a frying pan and fry the garlic and ginger.
  5. After the aroma is released, add onion, carrot and zucchini (or eggplant) and fry.
  6. After the onion is softened, add the mince, break up lumps and stir.
  7. Add red wine, salt and pepper.
  8. Add curry powder and flour to Step 5 and stir.
  9. Add Chinese chicken stock powder, water and bay leaf.
  10. Stir in the ingredients into Step 6 and add the milk after bringing to a boil.
  11. Stir, taste and adjust the flavour if necessary.
  12. Reduce the cooking liquid until it has almost gone.
  13. Stir occasionally.
  14. It's ready to serve.
