Chocolate Chip Pudding Cookies
- 1 cup soft butter
- margarine
- 3/4 cup brown sugar, firmly packed
- 1/4 cup sugar
- 1 pkg. (3-7/8 oz.) chocolate instant pudding mix
- 2 eggs
- 1 tsp. vanilla extract
- 1/2 tsp. salt
- 2-1/4 cup all-purpose flour
- 1 tsp. baking soda
- 1 pkg. (12 oz.) semisweet chocolate chips
- 1 cup pecans, chopped
- Preheat oven to 375F.
- Beat butter at medium speed until creamy; add sugars and pudding mix, beat well after each.
- Add eggs and vanilla; mix well.
- Combine flour, and soda; gradually add to butter mixture; beat well.
- Stir in chocolate chips and pecans; drop by rounded teaspoonfuls onto ungreased cookie sheets.
- Bake 9 to 11 minutes.
- Cool and store in airtight containers.
- May be frozen for 6 to 8 months.
