Broiled Tomatoes Parmesan Recipe
- 2 med ripe tomatoes - (12 to 14 ounce total)
- 1 x garlic clove chopped
- 2 tsp extra virgin olive oil
- 1 Tbsp. chopped fresh basil (or possibly 1 tspn dry basil)
- 1/4 tsp freshly-grnd black pepper
- 1/2 c. fresh soft bread crumbs (or possibly 1 slice bread, crumbled)
- 1 Tbsp. freshly-grated Parmesan cheese (preferably imported)
- Cut the tomatoes in half crosswise.
- Gently squeeze out and throw away the seeds.
- Place the tomatoes cut-side up on a boiler pan prepared with nonstick pan spray.
- Combine the garlic, oil, basil, and pepper in a small bowl.
- Brush proportionately over the cut surfaces of the tomatoes.
- Broil 6 inches from the heat source till warm, about 5 min.
- While the tomatoes are broiling, combine the crumbs and cheese in a small bowl; sprinkle proportionately over the tops of the warm tomatoes.
- Return to the broiler till the crumbs are browned, about 2 min.
- Serve immediately.
- This recipe yields 4 servings.
- Serving size: 1/2 tomato.
