Fig & Jarlsberg Flatbread Sandwich
- 8 whole Ripe Figs, Halved Lengthwise
- 1 Tablespoon Olive Oil
- 1 Tablespoon Honey
- 4 pieces Flatbread
- 2 ounces, weight Jarlsberg Cheese, Shredded
- 1/2 cups Mesclun
- 1.
- Preheat the oven to 425 F. Place the figs, cut side up, on a rimmed baking sheet and drizzle with the olive oil.
- Roast in the oven for 10 minutes.
- Remove the baking sheet from the oven and drizzle the figs with the honey.
- Set aside.

- Heat a large skillet over medium heat.
- Place 1 piece of flatbread in the skillet.
- Arrange 4 of the roasted fig halves over half of the flatbread (only cover half of it because youll fold the flatbread in a moment) and arrange 1/4 of the shredded cheese over the figs.
- Cook for 1 minute, or until the cheese begins to melt.

- Add 1/4 of the mesclun, then fold the flatbread in half and press gently with a spatula.
- 4.
- Flip over the sandwich and cook for an addition minute.
- Remove the sandwich from the pan and repeat the procedure 3 times with the remaining flatbread and ingredients.
- Serve immediately.
