Beef and Broccoli Stir Fry
- 1/2 pounds Beef Sirloin, Sliced In Thin Strips Against The Grain
- 1 teaspoon Soy Sauce
- 1 teaspoon Mirin
- 1/2 teaspoons Cornstarch
- 18 teaspoons Baking Soda
- 1 head Broccoli Cut Into Florets
- 1 Tablespoon Vegetable Oil
- 1 Tablespoon Ginger, Minced
- 1 clove Garlic, Minced
- 2 teaspoons Soy Sauce
- 2 Tablespoons Oyster Sauce
- 1 teaspoon Mirin
- 1 teaspoon Light Brown Sugar Or Granulated Sugar
- 1 teaspoon Cornstarch
- In a medium bowl, combine beef, soy, mirin, cornstarch and baking soda.
- Allow to marinate at room temperature for 1530 minutes.
- In the meantime, bring a large pot of salted water to a boil.
- In a large bowl, combine cold water and ice cubes for water bath.
- Add broccoli to pot and parboil for 2 to 2 1/2 minutes; drain and shock in the ice water bath.
- Drain when cool.
- For the sauce, whisk together soy, oyster sauce, mirin and sugar in a small bowl.
- In a separate bowl, dissolve the cornstarch in 1 teaspoon of water.
- Heat oil in a large saute pan or wok over medium-high to high heat.
- Add beef and stir fry for 12 minutes or until browned on both sides but not fully cooked through.
- Add ginger and garlic; saute 30 seconds.
- Add broccoli and sauce, and stir to combine.
- Stir in cornstarch mixture.
- Boil sauce for 13 minutes or until thickened.
- Serve with steamed jasmine rice.
- Enjoy.
