Beef and Broccoli Stir Fry

  1. In a medium bowl, combine beef, soy, mirin, cornstarch and baking soda.
  2. Allow to marinate at room temperature for 1530 minutes.
  3. In the meantime, bring a large pot of salted water to a boil.
  4. In a large bowl, combine cold water and ice cubes for water bath.
  5. Add broccoli to pot and parboil for 2 to 2 1/2 minutes; drain and shock in the ice water bath.
  6. Drain when cool.
  7. For the sauce, whisk together soy, oyster sauce, mirin and sugar in a small bowl.
  8. In a separate bowl, dissolve the cornstarch in 1 teaspoon of water.
  9. Heat oil in a large saute pan or wok over medium-high to high heat.
  10. Add beef and stir fry for 12 minutes or until browned on both sides but not fully cooked through.
  11. Add ginger and garlic; saute 30 seconds.
  12. Add broccoli and sauce, and stir to combine.
  13. Stir in cornstarch mixture.
  14. Boil sauce for 13 minutes or until thickened.
  15. Serve with steamed jasmine rice.
  16. Enjoy.
