Welsh Rarebit
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups milk
- 2 cups grated cheddar cheese
- 1 teaspoon dry mustard
- 12 teaspoon salt
- 1 dash pepper
- 14 teaspoon paprika
- toast or cracker
- Melter butter in saucepan over medium heat.
- Blend in flour gradually and cook, stirring constantly until mixture bubbles.
- Stir in milk gradually and stir til thickened.
- Add grated cheese and mustard.
- Stir til cheese is melted.
- Add seasonings.
- Serve immediately over hot toast or crackers.
