Peppery Chicken Recipe
- 8 skinned chicken breasts
- 2 tbsp. extra virgin olive oil
- 2 tbsp. soy sauce
- 2 tbsp. honey
- 1/2 teaspoon thyme
- 1/2 teaspoon paprika
- 1 tbsp. white vinegar
- 1/4 teaspoon allspice
- 1 teaspoon grnd pepper
- 2 c. mushrooms
- Preheat oven to 375 degrees.
- Place chicken in a shallow pan.
- Combine extra virgin olive oil, soy sauce, honey, thyme, paprika, vinegar, allspice, and pepper and pour over chicken.
- Marinate in refrigerator for at least an hour.
- Bake chicken for 30 to 40 min or possibly till cooked through.
- Surround chicken with sliced mushrooms and bake 5 min more.
- FOR GRILLING: Remove breasts from marinade and grill till cooked through, basting periodically with marinade.
- Add in mushrooms to the marinade and simmer for 5 min.
- Spoon over grilled chicken breasts.
- Serves 8.
