Chocolate Honey Energy Bars

  1. Preheat the oven to 350F (180C).
  2. Lightly coat a 9 by 9-inch baking pan with cooking spray, then line with parchment paper.
  3. In a large mixing bowl, mix together sunflower seeds, pumpkin seeds, oats, dried fruits and chocolate chips until well mixed.
  4. Add the vegetable oil, honey and applesauce in a small saucepan over medium heat.
  5. Bring to a boil and remove from the heat.
  6. Pour the honey mixture to the oats mixture.
  7. Stir with a wooden spoon until well combined.
  8. Place the mixture into the prepared pan.
  9. Using the back of a spoon or a measuring cup press mixture evenly and firmly into the pan.
  10. Bake for about 30 minutes, or until golden and firm to touch.
  11. Let it cool in the pan on a wire rack to room temperature.
  12. Cut into bars.
  13. Note: You can use any dried fruits, such as prunes, raisins, dried cherries.
  14. The bars can be kept in the a air-tight container in the fridge for at least 1 week or in the freezer for up to 1 month.
