Chocolate Honey Energy Bars
- 3/4 cup sunflower seeds
- 1/4 cup pepitas (pumpkin seeds)
- 2 tablespoons sesame seeds or flax seeds
- 1 1/2 cups rolled oats
- 1/2 cup cranberries, dried chopped
- 1/2 cup apricots, dried
- 23 cup chocolate chips (semi-sweet)
- 1/4 cup vegetable oil such as canola oil, olive oil
- 1/2 cup honey
- 1/2 cup applesauce unsweetened
- Preheat the oven to 350F (180C).
- Lightly coat a 9 by 9-inch baking pan with cooking spray, then line with parchment paper.
- In a large mixing bowl, mix together sunflower seeds, pumpkin seeds, oats, dried fruits and chocolate chips until well mixed.
- Add the vegetable oil, honey and applesauce in a small saucepan over medium heat.
- Bring to a boil and remove from the heat.
- Pour the honey mixture to the oats mixture.
- Stir with a wooden spoon until well combined.
- Place the mixture into the prepared pan.
- Using the back of a spoon or a measuring cup press mixture evenly and firmly into the pan.
- Bake for about 30 minutes, or until golden and firm to touch.
- Let it cool in the pan on a wire rack to room temperature.
- Cut into bars.
- Note: You can use any dried fruits, such as prunes, raisins, dried cherries.
- The bars can be kept in the a air-tight container in the fridge for at least 1 week or in the freezer for up to 1 month.
