Apple, Potato And Cheddar Soup Recipe
- 2 Tbsp. vegetable oil
- 3 med Granny Smith apples peeled, minced
- 1 x potato peeled, minced
- 1 x celery stalk minced
- 1/4 c. finely-minced onion
- 1/8 tsp grnd thyme
- 1/4 c. white wine
- 5 c. chicken stock
- 4 c. grated mild Cheddar cheese
- 1/2 c. heavy cream
- 1/8 tsp nutmeg Salt to taste Freshly-grnd white pepper to taste Buttered croutons Unpeeled diced apples
- Heat oil in large saucepot; add in apples, potato, celery, onion and thyme.
- Saute/fry 10 min.
- Stir in wine and simmer 2 min; add in stock and simmer 45 min.
- Puree soup mix.
- Return to saucepot; over very low heat, and stir in cheese, cream, nutmeg, salt and pepper to taste.
- Cook just until heated through - don't allow to boil.
- Garnish with croutons and diced apples.
- This recipe yields 4 servings.
