Apple, Potato And Cheddar Soup Recipe

  1. Heat oil in large saucepot; add in apples, potato, celery, onion and thyme.
  2. Saute/fry 10 min.
  3. Stir in wine and simmer 2 min; add in stock and simmer 45 min.
  4. Puree soup mix.
  5. Return to saucepot; over very low heat, and stir in cheese, cream, nutmeg, salt and pepper to taste.
  6. Cook just until heated through - don't allow to boil.
  7. Garnish with croutons and diced apples.
  8. This recipe yields 4 servings.
