Red Velvet Brownie Cupcakes

  1. Preheat oven to 350 and line cupcake tins.
  2. Melt butter and chocolate over a double boiler set over barely simmering water.
  3. Cool slightly.
  4. In a large bowl, beat eggs and whisk is sugars, salt and extracts.
  5. Slowly add in the chocolate mixture and food coloring.
  6. Fold in the flour until just combined.
  7. Bake for 35-40 minutes or until shiny and beginning to crack on top.
  8. Cool in pan on rack and frost with whipped cream cheese frosting after cupcakes are cool.
