White Turkey Chili
- 2 tablespoons olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 medium yellow bell peppers, diced
- 2 lbs lean ground turkey (white meat)
- 4 tablespoons chili powder
- 1 tablespoon cayenne pepper
- 2 tablespoons ground cumin
- 12 teaspoon salt
- 12 teaspoon sugar
- 1 teaspoon balsamic vinegar
- 2 (28 ounce) cans diced tomatoes (undrained)
- 1 (4 ounce) can green chilies
- 2 (16 ounce) cans navy beans, drained
- Add onion, garlic,and bell peppers.
- Cook 3-4 minutes, stirring occasionally.
- Add turkey and cook another 5 minutes, stirring to brown the meat.
- Mix in chili powder, cumin, salt, sugar and vinegar.
- Add diced tomatoes, salsa, chilies and beans.
- Bring to a boil.
- Reduce heat and simmer uncovered, stirring occasionally.
- Or turn off heat and let sit until serving time when it can be re-heated.
- Serve with toppings of grated cheddar cheese, sour cream.
