Extra Healthy Cauliflower Mash
- 1 head cauliflower, separated into florets
- 12 cup milk
- 2 garlic cloves, minced
- 8 g glucomannan (fiber powder)
- salt and pepper, to taste
- Preheat oven to 300F.
- Steam cauliflower for 10 minutes, until soft enough to easily pierce with a fork.
- Remove from heat & transfer to a food processor or blender.
- Process until smooth.
- Add milk, garlic, salt and pepper.
- Pour into 1-1/2 quart baking dish.
- Bake for 10 min., until top is slightly browned.
