Crispy Coconut-Oatmeal Cookies
- 1 c. sugar
- 1 c. firmly packed brown sugar
- 1 c. shortening
- 2 large eggs
- 1 tsp. vanilla
- 2 c. all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 2 c. regular oats (uncooked)
- 2 c. crisp rice cereal
- 1 c. flaked coconut
- Beat shortening and sugars at medium speed of electric mixer until blended; add eggs and vanilla, beating well.
- Combine flour, soda, baking powder and salt; add to creamed mixture, mixing well. Stir in oats and remaining ingredients.
- Shape into 1-inch balls and place 2 inches apart on a lightly greased cookie sheet. Flatten slightly with fork.
- Bake at 350u0b0 for 12 minutes. Transfer to wire racks to cool.
- Makes 7 dozen.
