Crispy Coconut-Oatmeal Cookies

  1. Beat shortening and sugars at medium speed of electric mixer until blended; add eggs and vanilla, beating well.
  2. Combine flour, soda, baking powder and salt; add to creamed mixture, mixing well. Stir in oats and remaining ingredients.
  3. Shape into 1-inch balls and place 2 inches apart on a lightly greased cookie sheet. Flatten slightly with fork.
  4. Bake at 350u0b0 for 12 minutes. Transfer to wire racks to cool.
  5. Makes 7 dozen.
