Tricia's thin and crispy pancakes
- 2 cup Spelt Flour (for Gluten Free version use Gluten free Oat Flour)
- 1/2 tsp Cream of tartar
- 1/4 tsp baking soda
- 1/4 tsp Sea salt
- 6 tbsp Organic sugar
- 1 tsp Vanilla extract
- 3 cup Almond milk
- 2 tbsp Butter
- Mix all ingredients except the butter in a mixing bowl.
- Heat pan to Medium heat
- Melt a pat of butter in the pan and scoop batter into pan 1/4 cup per pancake.
- Cook until bubbles form on top and pancakes are golden brown on the bottom
- Flip and cook until golden brown on second side
- Repeat steps 3 through 5 until batter is gone.
- (Be sure not to let the pan over heat! )
