Ginger Fish Sauce (Tirk Khngay )
- 14 cup boiling water
- 14 cup sugar
- 14 cup fresh lime juice (about 2 limes)
- 14 cup fish sauce
- 13 cup fresh gingerroot, peeled and grated
- 2 garlic cloves, minced
- 3 hot chili peppers, seeded and chopped
- In a small bowl, mix water with sugar until sugar is dissolved.
- Stir in remaining ingresdients and let sit until cooled.
- Use as a dipping sauce.
