Light Strawberry Charlotte
- 2 cups fresh strawberries, steam removed Safeway 1 lb For $3.99 thru 02/09
- 1/4 cup cold water
- 2 pkg. (4-serving size each) Jell-O No Sugar Added Strawberry Jelly Powder
- 1 1/4 cups boiling water
- 1 cup low-fat vanilla yogourt
- 38 - 40 Nilla Vanilla Wafers
- 1/3 cup Cool Whip Light Whipped Topping, thawed (optional)
- Reserve 1 strawberry for garnish.
- Place remaining strawberries in blender container with cold water; cover.
- Blend until pureed.
- Dissolve jelly powder in boiling water in medium bowl; stir in pureed strawberries.
- Refrigerate 45 minutes or until slightly thickened.
- Add yogourt.
- Beat with electric mixer on low speed until light and fluffy.
- Line bottom and side of 9-inch pie plate with wafers.
- Add strawberry mixture.
- Refrigerate 2 hours or until set.
- Top with whipped topping and a strawberry.
