Mocha Snacking Cake
- 23 cup butter, softened
- 1 12 cups granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 23 cups all-purpose flour
- 34 cup cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 14 teaspoon salt
- 1 13 cups brewed coffee, chilled (strong)
- Make 1 1/3 cups of coffee.
- Chill until cool.
- Grease and flour an 8-inch (2L) square metal cake pan.
- In large bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time, just until incorporated.
- Stir in vanilla.
- In separate bowl, sift together flour, cocoa, baking soda, baking powder, and salt; add to butter mixture alternately with coffee (make 2 additions of dry ingredients and 1 of coffee).
- Beat until almost smooth.
- Scrape into prepared pan; spread evenly.
- Bake at 350F (180C) in center of oven until cake tester inserted in centre comes out clean, 45 to 57 minutes.
- Let cool in pan on rack.
