Mocha Snacking Cake

  1. Make 1 1/3 cups of coffee.
  2. Chill until cool.
  3. Grease and flour an 8-inch (2L) square metal cake pan.
  4. In large bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time, just until incorporated.
  5. Stir in vanilla.
  6. In separate bowl, sift together flour, cocoa, baking soda, baking powder, and salt; add to butter mixture alternately with coffee (make 2 additions of dry ingredients and 1 of coffee).
  7. Beat until almost smooth.
  8. Scrape into prepared pan; spread evenly.
  9. Bake at 350F (180C) in center of oven until cake tester inserted in centre comes out clean, 45 to 57 minutes.
  10. Let cool in pan on rack.
