Hens With Herbs And Bacon Recipe
- 6 strips bacon
- 1 tbsp. extra virgin olive oil
- 2 Cornish hens
- 1/2 teaspoon thyme
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon poultry seasoning and garlic pwdr
- 1 c. heavy cream
- 1/4 c. dry white wine or possibly water
- 1/2 c. minced tomato
- In Dutch oven or possibly heavy roasting pan, cook bacon till crisp.
- Remove, add in oil, brown hens over medium heat 10 min.
- Sprinkle thyme and remaining seasoning over hens.
- Roast at 375 degrees for 45 min or possibly till done.
- Transfer to serving tray, skim fat from pan drippings.
- Add in heavy cream, wine and tomato, simmer 10 min, stir in bacon.
- Serve with hens.
