Chilled Strawberry and Mint Soup

  1. Combine all the ingredients, except the mint, in a blender and mix well
  2. Refrigerate for at least 1 hour to allow the flavors to blend.
  3. Before serving, stir in the chopped mint.
  4. Pour into soup bowls and serve.
  5. This is a great chilled soup or summer drink.
  6. Enjoy.
