Raw Apple Cookies
- 1 pound butter or margarine
- 1 1/2 cups brown sugar, dark
- 1 1/2 cups sugar granulated
- 6 large eggs
- 1 tablespoon vanilla extract
- 4 cups apples peeled and diced
- 1 cup raisins, seedless or chopped walnuts
- 2 teaspoons baking soda
- 1 tablespoon cinnamon
- 1 teaspoon ginger ground
- 1 teaspoon cloves ground
- 6 cups flour, all-purpose
- Preheat oven to 350F (180C).
- Spray cookie sheets or lightly grease.
- Cream butter or margarine and sugars.
- Add eggs, beating well after each addition.
- Add vanilla.
- Stir in baking soda, cinnamon, ground ginger and cloves.
- Stir in apples, nuts and raisins (if desired).
- Add the flour and mix well.
- Drop by teaspoonful onto lightly greased cookie sheets.
- Bake at 350F (180C) for 10 to 12 minutes or until lightly browned.
