Red Beans and Rice

  1. Pick through beans to remove any rocks.
  2. Wash beans and cover with water in a large pot.
  3. Add onion, bell pepper, ham hocks, and garlic.
  4. Cook on low heat until done (about 2 to 3 hours depending upon how soupy you like your beans).
  5. Remove hocks; allow to cool.
  6. Remove meat from hocks and return meat to bean mixture.
  7. Add salt, pepper, liquid smoke and butter; heat through.
  8. Serve over rice.
