Pickled Shrimp
- 1/2 gallons Water
- 1 Tablespoon Salt
- 4 Tablespoons Pickling Spice
- 1/2 whole Onion, Halved
- 1/2 whole Carrot, Chopped
- 1 stalk Celery, Chopped
- 1/2 whole Lemon
- 2 pounds Fresh, Raw Shrimp, Shells On
- Cocktail Sauce, For Serving
- Put all ingredients except the shrimp (water through lemon) into a large pot and bring to a boil.
- Boil for two minutes, then add shrimp and boil for an additional two minutes.
- Immediately pour shrimp into an ice water bath.
- Drain and peel shrimp (except for tails) and serve with cocktail sauce.
