Homemade Chicken Stock
- Leftover chicken parts including backs, necks and bones
- 2 carrots, chopped
- 1 celery stalk, chopped
- 1 bay leaf
- 3 peppercorns
- 1 onion, peeled and halved
- 8 cups water
- In large pot combine chicken, carrots, celery, bay leaf, peppercorns, onion.
- Add water and bring to a simmer.
- Skim off fat forming at top.
- Cook for 2 - 3 hours.
- Strain.
- Freeze or refrigerate
