BBQ Corn and Black Bean Quesedillas
- 1 (540 ml) can black beans, drained and rinsed
- 12 cup bick's sweet corn relish
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 14 cup cilantro or 14 cup parsley, chopped
- 1 tablespoon lime juice
- 1 jalapeno pepper, finely chopped
- 2 green onions, sliced
- 14 cup prepared salsa
- bick's hot pepper rings
- 4 large flour tortillas
- 2 cups cheddar cheese, shredded
- sour cream and guacamole (optional)
- Combine first 9 ingredients in medium sized bowl.
- Lightly oil grill or large frying pan and preheat to medium high.
- Sprinkle 1/4 cup cheese on half of tortilla, cover with about 1/2 cup black bean mixture and top with another 2 tablespoons shredded cheese.
- Place Bick's hot pepper rings over cheese and fold the remaining half of the tortilla over so that it form a half moon.
- Place on hot grill.
- Grill until the cheese is melted and bubbly, about 2 minutes.
- Cut into wedges and garnish with sour cream and guacamole.
