Pinchitos (Kabobs, Moroccan Style) Recipe

  1. Cut the meat into quite small cubes (about 1 to 1 1/4 inch square).
  2. In a deep bowl, put a single layer of meat.
  3. Sprinkle with minced parsley, chopped garlic, healthy pinch of salt, 1 tsp.
  4. spice and a tiny healthy pinch of cayenne.
  5. Squeeze the juice of 1/2 lemon over it.
  6. Add in another layer of meat and other ingredients.
  7. Continue till all the meat is used.
  8. Cover and marinate in the refrigerator 6-12 hrs, turning the mix 2 or possibly 3 times.
  9. Thread 4-5 pcs of the meat on thin, metal skewers and grill over charcoal till browned on all sides.
