Grape Tomato and Mache Salad with Fresh Mozzarella

  1. To make Crostini:
  2. Preheat oven to 375F.
  3. Brush bread with oil.
  4. Arrange in single layer on baking sheet, and toast in oven 12 minutes, or until golden brown.
  5. To make Salad:
  6. Toss mache in serving bowl with 1 Tbs.
  7. oil and 1 tsp.
  8. vinegar.
  9. Toss together tomatoes, basil, garlic, 1 tsp.
  10. oil and 1 tsp.
  11. vinegar in separate bowl.
  12. Arrange mozzarella slices on mache.
  13. Drizzle with remaining 1 tsp.
  14. oil.
  15. Spoon tomato mixture into center of salad.
  16. Season with salt and pepper.
  17. Serve with crostini.
