Sig's Friend Dhal Makhani (Creamy Black Lentils)
- 6 oz black lentils soaked
- 2 oz red split lentils
- 4 fl oz natural (plain) yogurt
- 1 tsp cornflour (cornstarch)
- 3 tbsp ghee or vegetable oil
- 1 onion chopped
- 2 inch piece fresh root ginger crushed
- 4 fresh green chillies chopped very fine
- 1 tomato chopped
- 1/2 tsp chilli powder
- 1/2 tsp turmeric
- 1/2 tsp ground cumin
- 2 clove garlic sliced
- 1 pinch salt to taste
- 1 bunch cilantro chopped
- 1 red chilli to garnish
- soak black lentils overnight.
- drain and add to red lentils.
- in a pan .cover with water and bring to boil.
- reduce heat.simmer until tender.
- mash down with a wooden spoon.
- in a bowl mix the cream ,yogurt and cornflour.
- stir into the lentils.
- heat 1 tablespoon of the ghee ir oil in a wok.karahi or large pan fry onion,ginger, 2 of the green chillies add tomato until onion is soft but not brown.
- add the ground spices salt and fry for 2 minutes.
- stir this aromatic mix in.
- to the lentils and mix well .reheat.
- transfer to heatproof serving dish and keep warm
- heat remaining ghee or oil in wok over low heat and fry the garlic slices and remaining green chillies until garlic is slightly golden brown.
- pour over the lentils and mix in just before serving.
- place some extra cream to add for people if they wish too.
- serves 4-6
