Turkish Fried Mussel Rolls
- About 40 mussels, washed and beards removed
- vegetable oil for frying
- sea salt and freshly ground black pepper
- 1 cup all-purpose flour
- 2 egg yolks, lightly beaten
- 1 cup beer
- 1/3 cup shelled walnuts
- 1/3 cup fresh bread crumbs
- 1 garlic clove, peeled and finely chopped
- 1 1/2 tablespoons red wine vinegar
- 1/4 cup extra-virgin olive oil
- 1 small onion, peeled and thinly sliced
- 1 teaspoon sumac
- 2 tablespoons fresh flat-leaf parsley, roughly chopped
- 1 tablespoon extra-virgin olive oil
- 1 head romaine lettuce, roughly chopped
- 1 small bunch of arugula
- 4 bread rolls, cut lengthwise
- 1 lemon, cut in half
- Put the flour in a bowl, add the egg yolks, and mix well.
- Slowly pour in the beer, whisking continuously until you have a smooth batter.
- Set it aside to rest for 30 minutes.
