Curry Powder

  1. Wash the inside of a coffee grinder to remove residual coffee grinds; dry thoroughly.
  2. Grind the peppercorns with the mustard, fenugreek, cumin, cardamom and fennel seeds in the grinder until powdered (alternatively, you may grind them in a heavy-duty blender).
  3. In a large bowl, whisk the freshly ground mixture with the remaining ground spices (or, combine in the blender, if using).
  4. Transfer to small jars with tight-fitting lids.
  5. Makes about 1 cup.
