Curry Powder
- 1 tablespoon black peppercorns
- 1 tablespoon brown mustard seeds
- 1 tablespoon fenugreek seeds
- 1 tablespoon cumin seed
- 2 teaspoons shelled cardamom seeds
- 1 teaspoon fennel seed
- 2 tablespoons ground turmeric
- 1 tablespoon ground cinnamon
- 1 tablespoon ground coriander
- 1 teaspoon ground cloves
- 1 teaspoon ground ginger
- 1 teaspoon ground red pepper (pure ground red chile pepper)
- Wash the inside of a coffee grinder to remove residual coffee grinds; dry thoroughly.
- Grind the peppercorns with the mustard, fenugreek, cumin, cardamom and fennel seeds in the grinder until powdered (alternatively, you may grind them in a heavy-duty blender).
- In a large bowl, whisk the freshly ground mixture with the remaining ground spices (or, combine in the blender, if using).
- Transfer to small jars with tight-fitting lids.
- Makes about 1 cup.
